Ice machines in a hot back room

An air-cooled ice machine pulls heat out of the water and dumps it into the room. Put it in a 95°F dish area in a Tampa July, or in a closet behind a bar on 7th Avenue in Ybor with no airflow, and production falls well below the number on the brochure, which is rated at 70°F air. Spec sheets themselves show a 20 to 30 percent drop at 90°F. Owners call it broken. Often it is a machine that needs clearance, a clean condenser and a working fan.

Water is the other half. Tampa Bay tap water carries enough minerals to scale float switches, probes and evaporator plates within months if there is no filter or the cartridge is a year old. Thin or cloudy cubes, a slab that won't release in harvest, and a machine that stops halfway through filling the bin usually trace back to scale.
