Steam generator on iCombi and SCC scales heavily in South Florida tap water. Symptom is a CareControl descale fault that won’t clear, or visible steam-output reduction. We descale the generator with Rational tab chemistry, inspect the level sensor, and recommend a UC-M water treatment if there isn’t one in place.
Door gasket on 10-1/1 and 20-1/1 ovens takes compression set after 4–6 years. Steam leaks across the door frame, the kitchen smells like wet dough, cook results drift. OEM gasket, clean channel, install.
Core probe drifts out of calibration or the socket pins corrode from steam ingress. Symptom is a wandering cook temperature on automated programs. We test probe resistance, clean or replace socket.
Steam injection valve solenoid coil burns out — oven runs convection but won’t steam. Replace valve, verify steam introduction with sight check and cook test.
Drain on bottom of cavity backs up. Either the drain pipe has collapsed (heat-cycled rubber), or the drain pump has worn out. We replace whichever component is failing and verify free flow.
CareControl auto-clean pulls cleaner and rinse from internal tablets and a peristaltic-style dosing system. Dosing tube perishes, prime drops, clean cycle aborts. Tubing kit is field-replaceable.
Touchscreen freezes mid-cycle or won’t boot. Usually fixable with a firmware push and a control-board capacitor refresh; in severe cases the HMI assembly is replaced.
